Robin's Pumpkin Pepitas

My brother came up to visit recently and couldn't stop eating these....

3 cups of pepitas -raw shelled

(also known as pumpkin seeds, often found in the grocery store by the nuts or produce section)

1 tsp of sea salt

3 tsp of pumpkin pie spice (or a mix of cinnamon, ginger, nutmeg and

all spice)

3 tablespoons of coconut sugar

1 tablespoon plus 1 tsp of coconut oil (melted)

Heat oven to 295 degrees F, Place parchment paper on cookie sheet, Combine all ingredients and mix well, Place on cookie sheet as a single layer, Bake for 20-25 minutes stirring every 7 minutes. Seeds should come out crunchy. Leave in oven for 3-5 more minutes if not crunchy. Remove from oven and cool.
